Italian cuisine: garlic-tomato risotto barley

Preparation time: less than 30 minutes

Cooking time: 1 hour

cilantro leaves to taste

½ Cup pearl barley

1 tsp oliverwho oil

3 tomatoes

1 clove of garlic

1 tsp Basil

¼ Tsp red pepper

2 tbsp tomato paste

½ Tsp sugar

salt to taste

feta cheese to taste


1. Add in a pan the oil and fry the garlic until Golden brown.

2. Add barley, tomatoes, Basil, tomato paste, red pepper, salt and sugar along with a Cup of hot water. Stir and cook 40-50 minutes, stirring occasionally to prevent the grits from sticking together and adding hot water when necessary.

3. When ready the risotto, season to taste and put in dish. On top sprinkle feta cheese and cilantro. Served hot.
