½ Cup tomato juice
salt and pepper to taste
250 g veal mince
3 tbsp vegetable oil
1. Rinse the eggplant. In hot oil fry the eggplant on all sides. Let cool slightly, cut in lengthwise and take out half of the pulp.
2. Finely chop the onion and fry in hot oil until Golden brown. Add the mince, salt, pepper and continue to fry until cooked. Tomatoes cut into small cubes, pour out the juice and add to the mince. There also add the pulp of eggplant. Stir and simmer 5-10 minutes on low heat.
3. Stuff stuffed eggplant, lay them in pan, pour tomato juice and simmer for 10-15 minutes. Served hot or cold.
